POSITION SUMMARY – Kitchen Manager

The Kitchen Manager is an hourly non-exempt SUPERVISOR position. The kitchen manager is directly responsible for all kitchen and BOH operations. The kitchen manager is also expected to work as a cook several shifts during the work week. It is expected that the KM will have completed the SERVESAFE management course and is able to communicate all state and local requirements.

Administrative duties include:

  • Hiring and terminating staff
  • Performing reviews
  • Managing daily/weekly/monthly inventory
  • Menu development and creation of daily specails along with new menu items
  • Managing the invoice ledger (“checkbook”) and calculating food costs
  • Placing orders and working with vendors/being aware of changes in product costs
  • Performing weekly/monthly inventory
  • Writing work schedules according to business needs
  • Weekly meetings with GMs and ownership to discuss state of the kitchen

Expectations:

  • Provide “boots on the ground” leadership in the kitchen
  • Maintain a positive and encouraging culture
  • Keep food and labor costs within budget
  • Deal directly with any staff issues/discipline and coaching
  • Be knowledgeable of all recipes, menu and prep items.
  • training staff to maintain quality and presentation standards
  • Be knowledgeable in local and state food safety practices
  • Provide courteous and effective coaching to staff during the shift
  • Orient and train staff during 5 day training schedule
  • Quickly and effectively deal with any equipment and refrigeration issues
  • Daily responsibilities can include
  • Opening and closing
  • Cooking during peak times
  • Ensuring quality and consistency in food
  • Covering breaks
  • Placing orders
  • Checking in deliveries/contacting vendors regarding credits or mispicks
  • Ensure the work area is clean, safe and clear of clutter
  • Ensuring waste is properly sorted and trash area is clean
  • Check in with manager on duty to advise on ticket times during peak business times
  • Perform line checks several times a day
  • Ensure all prep items are labeled, dated and rotated

POSITION SUMMARY – Assistant Kitchen Manager

The Assistant Kitchen manager is an hourly non-exempt LEAD position. The assistant kitchen manager is expected to provide hands on direction and leadership in the workspace, working side-by-side with other line staff. This position has minimal administrative duties, however these skills will be developed in the AKM. In the absence of a kitchen manager, the AKM will fulfill those duties. The AKM will be required to have a California food handlers card, but a ServeSAFE management certificate is preferred.

Expectations:

  • Be knowledgeable of all recipes, menu and prep items.
  • Show proficiency in training staff to maintain quality and presentation standards
  • Be knowledgeable in local and state food safety practices
  • Report staffing issues or interpersonal conflicts to the Kitchen manager or general manager
  • Participate in staff reviews
  • Provide courteous and effective coaching to staff during the shift
  • Orient and train staff during 5 day training schedule
  • Identify and report any safety, equipment or sanitation issues to KM or GM
  • Daily responsibilities can include
  • Opening and closing
  • Cooking during peak times
  • Ensuring quality and consistency in food
  • Covering breaks
  • Placing daily produce order
  • Checking in deliveries
  • Maintaining a clean and safe work area
  • Ensuring waste is properly sorted and trash area is clean
  • Check in with manager on duty to advise on ticket times during peak business times
  • Perform line checks
  • Ensure all prep items are labeled, dated and rotated
